Un&#8217;ottimo modo per apprezzare gli asparagi in primavera.
Ingredienti (per 4 persone):

250 g di asparagi
50 g di burro
100 g di farina
1 lt di brodo
1 tuorlo d’uovo

Preparazione.
Sbucciate gli asparagi, tagliateli a pezzetti e fateli bollire in acqua salata.
